We make the filling by hand, from scratch, a couple of times per week in our small kitchen in Issaquah, WA. Our award winning Fortunato No. 4 68% dark chocolate adds a creamy, luscious texture to the outside.
Mint patties want and need dark chocolate as the shell. Mint is a very fresh, light herb and the filling is sweetened. Dark chocolate adds a deep, rich element. The combination of lightness and richness is what makes the flavor combination so irresistible.
