"Fortunato No. 4 is the Rolex of Chocolate. It is unbelievable."

- Pastry Chef Roger von Rotz

Thank you so much for your interest in our chocolate! Please note that our 100% money back guarantee does not apply to heat damaged chocolate.

For environmental reasons, we no longer use thermally protective packaging. Thermal packaging requires paper, plastic, metallic bubble wrap, and plastic/chemical gel packs, which end up in landfills and are not biodegradable. We refuse to do that to the planet. We will continue to use USPS Priority shipping, so our products arrive as quickly as possible, and we'll always package your order to avoid breakage. But if the products melt or are otherwise heat damaged in transit, we can’t offer replacement or refunds. Please consider carefully before ordering -- by placing your order, you consent and assume all risk for heat damaged products. Typically, we recommend shipping when temps at the receiving location are under 76F to avoid potential heat damage. Thank you for understanding and honoring our commitment to the environment.

Fortunato 36% Milk, Strawberries, Cranberries, Nibs Bar

As with all creations made by our wonderful chocolatier Javier Valencia, you are going to get layers of flavor and balance in this bar. We looked for ways to both soak up excessive sweetness and accentuate the wonderful textures and flavors of our Fortunato No. 4 36% milk chocolate.

We knew that we wanted to do something with strawberries and the only shelf stable way to use strawberries in a product are to go with either dried or dehydrated strawberries.

We didn't like the moist, gooey texture of dried strawberry, so we decided to go with dehydrated strawberries, which have a nice flaky chew.

But dehydrated strawberries are very acidic. They taste like strawberries, but the don't have much natural sweetness.

Hence, our use of the 36% milk chocolate here. It is a nice foil for the acidity of the dehydrated strawberries.

As Javier worked on this, we came to believe that the strawberries and milk chocolate alone were too straight forward. We wanted more nuance.

Javier added cacao nibs to the bar and that added some bitterness and crunch to go with the creamy sweetness of the chocolate and the acidity of the strawberries.

However, now we were going too far towards acidity and bitter and we wanted to bring the sweetness levels back up a bit, with out losing the berry essence of the bar.

That is how Javier made the decision to bring in dried cranberries.

With the dried cranberries, we feel we have enough sweetness, the right kind of acidity, chew, crunch, a bit of bitter. The nibs also add some deep chocolate flavor.

It is a complex and satisfying bar and it is frankly a beautiful and aesthetically pleasing work of art as well.

As always, we aren't guessing willy nilly about the products we put online.

We're putting winners from our shops up for your consideration.

This particular bar has a following.

We see the same folks over and over again coming in to buy this bar and this bar only.

It is what they want and what they must have and of course, we are more than happy to oblige.

Our price point for this bar is $8.99 for 5 ounces. Most comparable bars in the grocery store are 2 - 3 ounces for $3 - $4.

But we believe the quality of this bar is better than most you will find in a store.

Ours will certainly be more fresh as we make these in small batches by hand.

And of course, because we buy and process the cacao direct, and cut out all middle men, there are no distributers, brokers, or retailers eating up our profit margins.

This allows us to pay huge premiums to our cacao farm partners, which in turn is helping about 500 farm families in Peru thrive.

You get something delicious, done the right way.

All of our products come with a 100% unconditional, no questions asked, money back guarantee. If you are unhappy for any reason, just send us an email and ask for a full refund.

Fortunato Chocolate is known for its rich fruit and nutty flavors, floral aroma, smooth texture, and lack of bitterness.

The Pure Naçional trees that grow the cacao used in our chocolate have the distinction of being the oldest, rarest, and most sought after in the world. So rare in fact, that they were thought to be extinct by the early 20th century, wiped out by disease. The happenstance discovery in a remote valley of the northern Peruvian jungle by Dan Pearson and Brian Horsley would eventually lead the founding of Fortunato No. 4 and the reintroduction of the world to this exquisite tasting chocolate.

All of our confections are made by hand in our chocolate kitchen in Issaquah, WA.

The amount of chocolate we have available for the general public is in limited supply due to demand from pastry chefs and chocolatiers. If you are a chocolate lover, don't hesitate!

Whoever is creating these delectable delights is a genius. A beautiful combination of flavors and crunchiness. I couldn't do eating them.
