The addition of pumpkin seeds and pistachios makes this a very complex and delicious bar of chocolate. Strawberries, Cranberries And Nibs Milk Chocolate Bar
Our 36% milk chocolate is a nice foil for the acidity of dehydrated strawberries. As we worked on this, we came to believe that strawberries and milk chocolate alone were too straight forward. We wanted more nuance and decided to add cacao nibs to the bar, which added bitterness and crunch to go with the creamy sweetness of the chocolate and the acidity of the strawberries. However, now we were going too far towards acidity and bitter and we wanted to bring the sweetness levels back up a bit, without losing the berry essence of the bar. With the addition of dried cranberries, we feel we have enough sweetness, the right kind of acidity, chew, crunch, and bitter. The nibs also add deep chocolate flavor. It is a complex and satisfying bar and it is frankly a beautiful and aesthetically pleasing work of art as well.
Mango Chili Dark Milk Chocolate Bar
Chili mango is a very typical Mexican combination. We remember going into Latino markets in our hometown of San Diego, CA, when we were kids and seeing a wide assortment of chili mango products. We especially loved chili mango lollipops growing up, peppery on the outside, sweet and tangy on the inside. When mangos are at their best, they are a perfect blend of sweet and acid. It is the acidity in mango, especially dried mango, that makes a milk chocolate a good choice for pairing. However, you don't want to go too sweet on the pairing because mango is sweet too. That is why we use our 47% dark milk chocolate here. This bar is very delicious, the kind of delicious that makes you stop what you are doing for a second so that you can enjoy the flavor with full concentration. And then, right at the end, here comes just the right amount of kick from an earthy, acidic, red pepper.
Quinoa And Chía Dark Milk Chocolate Bar
Beautiful crunch from the toasted quinoa and it isn't packed in lightly. There is a lot of quinoa in there. Quinoa has a rich, creamy, earthy flavor. In addition, we include toasted chia seeds. Both chia and quinoa are Peruvian products, perfect for pairing with chocolate made from Peruvian cacao. Chia tastes of herbs, similar to chamomile. The inclusion of chia is very soothing and comforting, and the small crunchy texture is wonderful. You get out rich and creamy, but still very cacao forward milk chocolate with the 47% dark milk, then you get the earthy toast from the quinoa, and then the herbal from the chia.
Key Lime Cookie Bar Milk Chocolate
We dehydrate key limes and infuse our 36% milk chocolate with them. We strongly believe that the combination of acidity and milk chocolate is a match made in heaven. Sweet, creamy, acidic. It is an excellent expression of balance. We add chocolate cookies for texture. What you end up with is a chocolate key lime pie in a bar, with the cookies as the crust. It is not easy to produce a product that both adults and 8-year-old children can get on board with. This bar does that. Orange Blueberry Dark Milk Chocolate Bar
Dehydrated ripe oranges, that we dehydrate in our kitchen, give this bar a vibrant tang. Acidity pairs wonderfully with milk chocolate because acid and richness balance each other. Dried blueberries add excellent chewy texture and a touch of sweetness that rounds out the combination of orange and our 47% dark milk chocolate.
