Fortunato Pineapple Coconut 47% Milk Chocolate Squares
These chocolate squares are made with our 47% milk chocolate, then we hand dip one half, diagonally, in our 68% dark chocolate. The result is a rich coconut milk chocolate and pineapple chocolate experience with layers of sweetness, texture, and depth.
The first thing to point out is that dried, unsweetened coconut is a perfect complement to a sweeter chocolate. The richness and earthiness of the coconut soak up some of the sweetness from the milk chocolate. Dried coconut also has a nice, firm chew to it, which adds great texture and makes this coconut chocolate especially satisfying.
However, when you combine our Swiss-made milk chocolate and coconut, you end up with rich on rich. And too much richness, with no break in the action, can get old pretty fast. That is where our chocolatier, Javier, did some brilliant thinking to create a balanced artisan chocolate treat.
