New Fortunato Product - Quinoa Chia Crunch

At the beginning of the year, we set a goal here at Fortunato Choclate to put one new product online per week. To be honest, it was more my goal than anybody else's, but folks were going along with it.

We have a very wide selection of products in our retail store, and I've wanted our online store to have a similar selection.But it just hasn't been possible.

The fact of the matter is that our chocolatier, Javier Valencia, is simply too prolific. He has too many good and tasty ideas and our production lines aren't sophisticated enough to keep up with all the good ideas.

In our shops, sometimes people come in looking for their favorite products, only to find that we are out of stock. The issue is that there are so many favorites, and we don't know how much of each to make at any given time.

We've only been manufacturing products in earnest for a little over a year, so we are still learning. The situation is more acute for the products we put online, because those require us to make enough for the entire country.

Hence, we had to give up on our one product per week goal early in the year. Over time, as we invest in machines and our production lines become better organized, and we move into a bigger space eventually, we'll be able to put more and more great stuff online.

Javier has assured me that he has many, many more ideas.

All that being said, Javier came up with a new product several weeks ago, just playing around. We all found it to be so good and delicious, that we had no choice but to put it into production and make sure that it is available online.

Without further ado, I'd like to introduce you to our new Quinoa & Chia Crunch bar.

We're using our 47% dark milk chocolate for this one. In the future, we may offer a dark chocolate version as well. But in the name of full disclosure, I have to tell you frankly that this bar is more delicious with the 47% dark milk chocolate.

And in general, our goal here is to go for products that are as delicious as they can be, while still using high quality ingredients. Our cacao is organically grown, and we are using organic quinoa and organic chia seeds as well.

We've been dancing around a product like this for a while, but the hang up has always been a good, reliable source of puffed organic quinoa.

One of our favorite suppliers solved that for us by giving us access to all the necessary ingredients to make this lovely bar a reality. To imagine what the bar is like, start by thinking of a Nestle Crunch bar. That is the texture.

You get that beautiful crunch from the toasted quinoa and Javier doesn't pack it in lightly. There is a lot of quinoa in there. In all humility, I do believe that our 47% dark milk chocolate is far superior to the milk chocolate used in the Nestle Crunch bar.

Also, quinoa has such a rich, creamy, earthy flavor in its own right, and that beats out the flavorless, sugary, rice puffs used by the crunch bar. If it was just chocolate and quinoa on its own, this would be a great product.

However, Javier did not stop there. He added chia. This struck me as interesting. Of course, it is on theme, because both the chia and the quinoa are Peruvian products.

This gives us Peruvian cacao, Peruvian chia, and Peruvian quinoa all in one place. There is good continuity to it. But how would the chia taste? Honestly, at least to my mind, the chia is a stroke of genius. To me, the chia tastes of herbs, like a chamomile.

I've always loved herbs in chocolate. The combination is so soothing and comforting. I like the small hard texture of chia too.

Altogether, you have a very Peruvian themed product. You get the rich and creamy, but still very cacao forward milk chocolate with the 47% dark milk, then you get the earthy toast from the quinoa, and then the herbal from the chia.

As always, we try hard to keep our products very affordable when compared to products of lesser quality that you might buy from the grocery store.

We buy cacao direct from about 500 small cacao farm families in northern Peru. We pay around 10 times the price premiums required by FairTrade. We've been doing that voluntarily for a very, very long time now, around 15 years.

The reason we can do that while still offering fair prices is because we cut out middlemen. We buy cacao direct, make our own products, and sell direct.

Our products are not available in any shops but our own, and we don't work through any distributors. This allows us cut out middlemen and pass along the savings.
